During this special winter holiday edition of The Art of Pickling, a pickling workshop series with Gastro-Obscura, My Gefilteria partner-in-crime and I will teach the basics of vegetable fermentation and we'll toss in a little holiday gift at the end: a mini lesson on preserving fat (schmaltz, anyone?), a traditional activity this time of year in colder climates.
